Post-Round Raw Cookie Recipes

Naturally sweet and packed with nutrients, these quick and easy no-bake victory desserts are an ideal post round indulgence. Rich in healthy fats, fiber and antioxidants each cookie recipe provides a healthier alternative to satisfy your sweet tooth, while benefiting your body. They’re also dairy, gluten and soy free.

 

Vanilla Shortbread Cookies

Yields about 20 mini cookies

Ingredients

  • 2 cups raw unsalted walnuts
  • 1 cup shredded coconut
  • 3 tablespoons raw honey
  • 1 teaspoon vanilla extract
  • To taste, stevia
  • To taste, sea salt

Instructions

  • Combine all ingredients in a food processor. Process until a thick paste forms, about 1-2 minutes.
  • Transfer to a large bowl and use your hands to make into 20 cookies.
  • Place in the freezer for at least 15 minutes before enjoying cold.

Note: these cookies are best straight from the freezer.
